Feast of the Seven Fishes

Akasha traveled to Sicily in October and brought back a treasure trove of products and ingredients to create this year’s holiday menu. Sun-dried Pomodori di Pachino, grown in the soil-rich province of Siracusa. Prize-winning newly pressed green olive oil and almonds from the Mandranova Estate. Sun-ripe capers, caperberries and tuna bottarga from the island of Favignana. Sea Salt from the Trapani coast. Oregano & fennel from their favorite herb farm – Gli Aromi di Russino, overlooking the Sicilian coast. Red Bronte pistachios, which can only grow in the fertile, mineral-rich lava rock ground of Bronte, Sicily, near Mt. Etna. These prized hand-picked pistachios are only harvested every two years, and AR cucina has them from this year’s harvest. Chocolate from Antica Dolceria Bonauto in Modica, where they have been making chocolate since 1880. Candied orange and marmellata from the famed Pasticceria of Maria Grammatico who learned the ancient art of pastry-making from the cloistered nuns of Sicily.
